Joe, I don't think there is a limit on how many plants you could put in a 10 gallon tank. It's totally up to you. Of course, as long as your fish have the space to move around and to swim, lol. Actually, the more plants in a tank, the better - they help tank's ecology.
I don't think I have a favorite aquarium plant because they all look beautiful in their own ways to me. However, if I had to choose: many anubias and amazon sword species are nice; algae balls look cool; various vallisneria species are nice; love hairgrass in large amounts in a tank; bacopa; stargrass; cabombas, fanworts, and ludwigias are beautiful as well; love riccia plant; parrot's feather; wisteria ... et cetera, lol. See? I really love all plants. Most of them, however, require medium to high lighting and CO2 injections in order to grow well and stay healthy.
