How much substrate is it safe to switch out at a time?

I want to change out the gravel in my 75 gallon aquarium with pool filter sand. How much substrate is it safe to switch out at a time without reducing the bacteria too much?

I would collect ALL the gravel and put it in a nylon stocking(new one without detergents and such ) and just set it in the back of your tank for a month or so ....half and half is too much of a pain and more work then needed

Or you can do 1/3 at a time.
