The short answer is they generally have specially-designed fixtures, as they tend to run hotter than other types of lighting at a similar wattage.

You can use any bulb you want, as long as your fixture supports it. Having a 100W bulb does not mean you get 100W of light... that's controlled by the fixture or ballast, not the bulb.
Now that said, some bulbs are better or worse than others for tanks, but there's nothing I'm aware of that would stop you from using any bulb your fixture supports.
