I've kept dwarf gouramis, and I find them to be a bit
chiller than their larger relatives. I've kept pairs of various sex combinations, all of which did fine in tanks w/ plenty of space and cover. They will nip long, flowing fins, so they're not suited for community tanks w/ delicate, long-finned fish. How did your male die? If he was beaten to death by the other gourami, I might guess that that individual would be better off solo. If he wasn't picked on, are you sure there's nothing contagious floating around the water? Maybe it would be best to wait another week or so to make sure the second gourami is still healthy.
As I said, I can only speak from experience, but I've always kept pairs and they've done fine, as long as they have separate, planted areas to retreat to when they get cranky with each other.
