The dwarf guorami would be an okay one, as long as you include hiding places for the shrimp.
Otherwise, all I can think of are other small fish, like what you are removing from the tank. This is mostly because of the limits of a 10g tank, not because of the Amano shrimp.
One thing that I just thought of is that you might not see your Amano shrimp if you get a fish as big as a dwarf gourami or bigger. When I had my Amano shrimp in a tank with a
goldfish and a koi, they stayed hidden under a log almost all the time. I actually thought they were dead for over a year, and only found them alive when I was switching some aquarium equipment around.
