Well, certain foods make the colours stand out more.
Difference in lights does that too.
I guess when they get old they change a bit too.

What's the problem?

It depends on the fish. Some fish change color as they grow up, some change color depending on the food they eat, some change during breeding season, some change depending on water quality or surroundings.

What kind of fish and what type of color change?

I got 2 dalmation mollys for my daughters tank. They were about a 50/50 mix of black/white when we brought them home. We've had them over a year now, and they are about 95% totally black now.
