I've been searching around this site for a few days. I'm wondering if there are spreadsheets or charts for keeping track of your tank levels etc.? I haven't found any yet.

Sorry, I haven't found any.
As an alternative, keep a journal or notebook.
Date each entry and note the things that are done, like how large a water change, when I replaced a light bulb, added a fish, etc.
It's hard for me to remember when I last did maintenance on a filter motor or when I added which plant, or what ever.

I just use a small legal pad and keep a log of all of my water changes and chemistry readings and hang it under the tank.
