Because my son has an allergy to eggs, I found a little trick to make boxed cakes. If you take a boxed cake mix and mix it well (with a mixer) with a can of soda, it will rise enough and be just as tasty as your standard cake. Just be sure to pick an appropriate soda.
I made a chocolate cake with a mix that did not have eggs in the ingredient list (some of them do) using the mix and a cherry coke. I just recently made one that was lemon, by using Sprite.
Even better, you could mark these "eggless cakes" for either vegans or those with egg sensitivities. But if you do that, just BE ABSOLUTELY SURE you check the ingredient list for any egg proteins.
Easy peasy! Mix it up with the can of soda, put it in a greased/floured pan, and bake it for however long the instructions say to do. |
