Nice size tank!
First, if you have your heart set on Loaches do as AlyaskaGirl advised and go with YoYos. Clown Loaches reach 14 inches and would need at least a 200 gallon tank.
As for the rest Angels are great, I have 1 in my 30 gallon, but I wouldn't recommend getting 3 as 1 could end up being picked on. I would go with 4 or more.
Corydoras are awesome! Especially in sand substrate they are little diggers and are fun to watch in schools of 6+. I prefer to keep them in schools of at least 8, their antics are always a source of entertainment.
Silver Dollars are fun, I haven't had them but my brother loves them. If you want real plants it can be tricky. There are certain hardy/tough plants they don't eat as much but i cant remember what!
Bamboo Shrimp and Crabs I'm no help with. Haven't had either, but I have put Ghost Shrimp in some of my clients tanks and have always had to start with about 20 to ensure some survived the attach of the Angels (both clients had Angelfish). I don't know how large bamboo shrimp are but chances are Angels will grow large enough to consider them food. So lots of plants and hiding places would be good. As well as sand substrate for digging, shrimp like to dig.
When it comes to stocking I very seldom hold to the 1 inch rule as its more a guideline for beginners. But I have just found a great tool to determine your tanks capacity. Go here and have fun!
