fishless cycling question

I have a 10 gallon tank I've been fishless cycling it, and today my nitrites and ammonia are both at zero, and my nitrates are at 40. I know I'm supposed to do a large water change now.

I am going to add cherry shrimp to this tank, but it might be a few days before I get them.

Should I add a little ammonia everyday to keep the bacteria alive, like I have been doing with the cycle?

I'd keep adding ammonia until the day before you get the shrimp. Then do a large water change before adding the shrimp.

Yes, follow thorpbrian's advice above. If you stop adding ammonia, your benifical bacteria will starve off and you will be back to square one with your cycling.
