A "stable " tank ?

If my 6 month old tank appears to be functioning well, fish seem happy, plants are growing, snails and shrimps are under control. Can I assume that it will tend to remain that way if I do a 5 % water changes with vacuuming every 2 or 3 days

i'd just stick with 25% a week and you should be fine.... changing water and vacuuming that often might disturb the bacteria a little too much

As long as you keep up the maintance and don't make any changes, it a safe assumption. It's still a good idea to check your water periodically to be on the safe side.

Keep test your water at least weekly. Things can come up that could cause an ammonia spike. Depending on what fish you keep and how many a fish could die and go unnoticed. The decaying corpse can cause a spike. If you feed vegetables, an unnoticed pieces could decay in the tank. Regular water changes will also be a good indicator of future problems. For example an indication that you might have recently begun overfeeding.

Good thinking; thanks. Also thanks to all for idea of "disturbing gravel too much". I did not know that.
