I think your PetStore Lady steered you in the wrong direction by telling you to avoid water changes. My tap water has a
nitrate reading of 10, so I do a 30%
water change once a week.
A couple ways to help keep nitrates down are to have live plants in your tank, or buy a water filter that will remove the nitrates from your tap water.
API sells a product that will do that. I believe that you attach it to your faucet and it filters the water. It is only around $50 and you have to replace the cartridge periodically. I forget what it is called, but if you have an API
test kit, it is mentioned in the booklet under the nitrates section. You can find additional info about it on API's website.
