I just brought a couple of these guys home and they seem to be doing a lot of hiding. Is this normal? Can I hope that they will eventually feel safe in their new home? Is there a minimum number of dwarf gouramis I should have so they can school and feel safe?

I have one and he's out and about and very friendly.
They might just need to get used to their new surroundings.
Sometimes DG's don't get along, perhaps a 30g isn't big enough to have 3.
I don't believe they'll school.

DG's can become vwery aggressive if kept together, especially in quite a small tank like that. Mine was very friendly and always saying hello. Maybe they are just all hiding from each other, as they are too afraid of making the first move, and being attacked over terratory.

On the other hand, they may just begetting used to their new surroundings.

Time to update your aqaurium info so members can give the best accurate info.

Give them some time, they probably need to get used to their new hom.

I've got two and they mostly ignore each other, but they don't hide either. They are usually out around investigating (prob for food). They did hide for perhaps a few days when I first got them.

I replied in your glassfish thread also.
I see you have an ammonia reading. This can cause fish to hide also, as they may not be feeling well.
Daily water changes would be a good idea to get the cycle back.
Looks like you might have added too many fish at once.
