I was watching my Gourami from a distance, and it he looks kind of dull, but when I slowly walked toward the tank and he noticed me, he flares his fins and then he becomes brightly colored...is this normal? Just curious...I want him to be like that the whole time 'cause it's pretty.

my paradise will change colors, i think it has to do with their mood, water parameters (ammonia, nitrite, etc.), water temp, and even the weather...

Ya, I guess you're right, whenever he's happy and swimming everywhere, he's colorful; but when I watch him, he kind of dulls down
