What kind of fish/colors are you interested in? You had to have seen something initially that sparked in your interest in fish keeping to pick up that 75 gallon you got
What was it? Are you going for a similar setup? There are TONS of different types of fish. Community (your basic tropical fish generally), Central American and South American Cichlids (also called new world cichlids, African Cichlids(there are 3 subsets with more subsets in those subsets.. they are Lake Victorian, Lake Malawi, and Lake Tanganyika), and then there are a few American specific fish but there really aren't a ton.
Are you interested in fish that are just very mellw and glide about thet ank? Do you like to watch them schooling around? Do you like them to have some fight and personality to them? How about just 1 large fish as the focal point of the tank, or would you rather a bunch of small ones?

Fishlore which you've already found!! woo) is one of the most valuable sources of info I have found for general fish care and info on tropical fish.
The Cichlid-Forum has about every SA, CA and African cichlid you can think of. The site is a devotion to all things cichlid basically. They have several cookie cutter setups, like you originally asked about as well. Here you can view a list of
cookie cutter setups for a 75 gallon. African cichlids are generally semi-to very aggressive but there are quit a few that are mellow as well and quite beautiful.
Planetcatfish has all sorts of plecos, cory cats (very small personable catfiosh that love to shoal around in groups of 6+ and also larger catfish such as Syno's which are great to keep in with any of the various types of cichlids basically.
Those should get you started, between here, C-F, and PC I think you'll have most basic angles covered. Hope this helps.
