I just got three cherry barbs for my 10 gallon tank and I am pretty sure that I have two males and one female. I was planning to get a total of five cherry barbs but I also want to have other fish in my tank.

Should I just get one more female and keep a school of four? They seem to be getting along but the males swim together more and kind of leave the female out.
Also, do they like a well planted tank?

I would get at least one more female.

Yes, they really love a planted tank. Not only do they spawn on plants, but having places to hide makes them more colourful and secure.

You should get 2 more females... it may not seem bad now, but when the males wanna...well... you know, those females wont get much rest. I had the combo of 5 cherry barbs and 3 smaller cories in a 10 gallon tank. It worked pretty good, then I moved the cherries into a 20 gallon tank and put neons in the 10. And yes, they LOVE planted tanks.
