I have two pair of convict. They paired up. The female had a really red / orange belly, but after a couple of day, they red / orange color strated to fade. Does that mean they already laid their eggs or what?

could be...the red comes and goes with her moods see if she is guarding a cave or a decoration with holes in it...in about a week you will know for sure

Also more than likely if she has layed eggs the colors will become more intense.
And if she does have eggs/fry any other fish in the tank are fair game.
