A bit concerned...

I'm just wondering... with Winter now living in a divided tank with my girl Riviera, he's showing off alot, and right this moment is furiously building a bubble nest. Will it stress him out to live with a girl betta? I don't want him to start biting his fins off or anything...

Do you have a clear divider? If so, may be you should change it to a different one (which doesn't allow them to see each other) just to stay safe.

They're in a 5g minibow, with one of those DIY dividers made out of that plastic craft mesh... it's white, but there's holes in it...

I really dont think i'll stress him out, I'd say it is rather healthy for them every once in a while to see a member of the opposite sex.

If they like eachother i'd say that it won't stress him out much. It could even be good for him to have something to do once in a while

give him a week to calm down..hes all in a huff and showing off ...do you blame him? shes a beaut!! after that, either buy some plants or move some so they kinda block the divider or darken the diy one you have....but usually they calm down after a week...goodluck!
