Most LFS run their tanks on an open system and a large sump system. This means all the tanks are connected and including the sump system there is more water circulating through those thanks than it looks like.
Double filters won't allow you to double stock. Yes more filtration is better but you have to think of swimming room, hiding/sleeping places.
I know this is a bad example but it's all I can think of
Say you have a room big enough for three people comfortably with one air conditioner/air filter. Add another air conditioner/air filter and three more people. This room is now nice and cool and the air is good because its filtered BUT... theres no room for personal space, no room to lay down, not much room to move around at all. Now your people get stressed and start to argue.
Fish are kind of the same way. A second filter will keep the water nice and clean and aereated but the fish are now crowded so they will be stressed, maybe come down with stress related disease, maybe fight. There may be deaths.
