Aquarium Stocking

Here's what we have right now in our 4 tanks:

2 gallon: 8 baby platies

6 gallon: 4 hockey sticks (penguin fish) and 3 panda corys

16 gallon: 5 rummy nose tetras, 1 platy, 1 3-striped cory, 2 otocinclus vittatus corys, 1 albino pleco, and 2 japonica shrimp

48 gallon: 2 platies, 1 guppy (recently moved from the 16g), 12 cardinal tetras, 5 african lampeyes, 6 glowlight tetras, 1 albino pleco, and 3 japonica shrimp

Here are my questions:

I am concerned about the 3 little panda cories. They seem extremely active in our 6g tank. Should I move them into our 48g? Or will they have enough room in our 6g? I would like to get a handful of catfish for our largest (48g) tank. Should I move the cories or get some other cories or plecos? The 3-striped cory seems like a great leftover food searcher and is also quiet at times. Maybe a good choice? Anyway, what do you suggest as far as the pandas go and our other tanks?

I have been checking our water parameters regularly for the past few months. It seems that in all of our tanks, the PH level is quite high. Our largest tank was originally lower but seems to have risen. The latest PH results are as follows:

2g -- 7.3
6g -- 8.0
16g - 7.9
48g - 8.0

Now, I know that platies and guppies prefer a PH of around 7.5. Even though our tetras seem happy, they generally require a much lower PH level (like 5.8 or 6.0). Should we do anything or leave things the way they are because the fish seem healthy and happy?

All the other water readings (ammonia, nitrite, and nitrate) seem optimal / low.

Last question... Almost 3 weeks ago, we got 4 "hockey sticks" for our 6g tank. If you are not familiar with them, they are also called penguin fish. They are a type of Characoid. They have black stripe thru teir bodies that makes them look like a hockey stick. Being a big hockey guy that I am and looking for some small fish that would be good for our little 6g tank, I decided to get 4 of them. They seem happy but I don't know too much about them. Should they be okay in that small a tank? Any useful info. on them?
