Gunk on bottom of tank

Hey yall i havent been on here in a while cause my tanks (yes i have 2 now) have been running smoothly and college has picked up a bit. However, I have had a recurring issue over the past month or so i wanted to bring up. No matter how much i vac the substrate (colorquartz by 3m) I cannot seem to get rid of what looks like new earth growing in the tank...I will get some pictures up of it but i do not know if it would be a bad idea to keep it in the tank because i have very many plants in it and am planning to throw some more in sometime soon.

Thanks!

Well ive actually been underfeeding for a bit...not really by choice but im never around so they get a little food when they can with just enough for the bottom feeders to scrounge on.
About the nitrate readings i went to go test ammonia today and wouldnt ya know it my last graduated tube for reading just shattered when i opened it
i do need to get pictures of it up i guess ill start another photobucket account.
If its any points up until last week i had been checking ammonia regularly and its been fine. Its heavy planted so its usually very stable
