Hello, I have either lucky bamboo or bamboo. Do only a few of the leaves need to be out of the water to support the other leaves that are underwater? I mean, will the few leaves (above water) get enough air for the other leaves? Or do all of the leaves need to be out of the water to support themselves?

Bamboo leaves of any kind need to be out of the water. any leaves under water will rot and die.

Yep I've had bamboo in shallow tanks and loved it but those leaves will rot so made sure to keep them above water level. Lucky bamboo works well in the filter body.
