Would two plants live for two or three weeks with no fish, and no CO2 injection, in a 6 gallon tank. Java moss and Anubias nana.

Probably, since those are pretty hardy plants. Just don't expect them to grow too fast. And make sure they get enough light. (But I'm no expert on plants, so wait for a few more opinions.)

The two plants mentioned will do just fine without co2 injection.

There is CO2 in the air around the tank, so the CO2 will go into the water from the air through diffusion. (I think I am stating the correct scientific law.) Having fish in the tank would only increase the CO2, not by a whole lot though.
