I was looking at my real plants and stated to wonder what they did to help my aquarium water if anything

i was told you need at least 15 plants to start affecting nitrates.... donno this person seems to know what they are talking about.

Depends on the type of plants. Fast growing plants such as Anacharis, Hornwort use more Nitrates faster than slow growing plants such Anubias and Java Fern. So having said that fast growing plants will affect Nitrates faster than slow growing plants.
