I have a few questions I am going to ask. First at what age do angelfish pair off. Second what behavior do the two angelfish present to each other before pairing off?

As far as behavior goes:

You can see lip-locking, brushing against one another, and other general sparring behaviors. (It is like many other animals, they want to make sure their mate is not from the weak end of the gene pool.) (Survival of the fittest at its finest. )

As for age, perhaps about 1-2 years of age. (Some angels never pair off, but given the proper circumstances I would wager that most probably would.)

Well, as far as I know I've been seeing some videos on youtube by people having angels that are spawning, and mating. Try searching it up on either google, or youtube.

Angels need to be probably a large size, like larger than the small or medium ones at the pet store, the only place I know that has large angelfishes, is Big Al's Aquariums, and they can identify to you which is a male or female.

When they told me that, they said that the angels need to be large size approx. About 5-7" perhaps of their length.
